Italian Red Pepper Turkey Soup

Ingredients

  • 1 lb lean ground turkey
  • 2 bags Shirataki noodles chopped and rinsed (found in the refrigerated section)
  • 1 bag spinach
  • 1/2 onion chopped
  • 1 tsp garlic
  • 2 T. Chicken bouillon
  • 2 red peppers chopped
  • 2 T fennel
  • 2 T Italian seasoning
  • 1/2 tsp pepper
  • Salt to taste
  • About 3 cups water or more

Instructions

  • While cooking the turkey in a soup pan, add all ingredients except water, noodles and chicken bouillon. Make sure to add a dash of olive oil if you are using extra lean turkey.
  • Sauté until cooked through and then add water, noodles and chicken bouillon.
  • Bring to boil for 5 minutes and serve!

Coconut Aminos Marinade

Ingredients

  • ¼ cup Coconut Aminos
  • 2 T. olive oil
  • 2 chopped green onions
  • 1-2 minced garlic cloves
  • ½ tsp. ground ginger
  • Freshly squeezed orange (optional)

Instructions

  • Combine ingredients and marinate your favorite meat or fish for at least 30 minutes.

Turkey, Spinach & Feta Burger

Ingredients

  • 1 ¼ lb. ground turkey
  • 1 tbsp. coconut oil
  • 1/3 cup red onions, finely chopped
  • 1 ½ cups spinach, chopped
  • ¾ cup zucchini, finely chopped
  • 2-3 garlic cloves, minced
  • 1 tsp. oregano, dried
  • 1 tsp. basil, dried
  • ½ cup feta cheese
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  • In a sauté pan heat coconut oil to medium heat. Add onion, spinach, zucchini, and garlic and sauté until onions are translucent and all vegetables are soft.
  • Take vegetables off of heat and slightly cool.
  • In a mixing bowl, combine turkey, seasonings, salt and pepper, feta cheese, and sautéed vegetables.
  • Form in to 6 patties.
  • Grill or sauté burgers on medium heat until internal temperature reaches a minimum of 160 degrees.
  • *Baking option* Preheat oven to 375 degrees and bake for 20-25 min.
