Jackie’s JACKED UP Stuffed Peppers!

Ingredients

  • 1 T. olive oil
  • 1 chopped green pepper
  • 1 cup chopped mushrooms
  • 1 cup chopped yellow onion
  • 1 clove garlic (pressed)
  • 2 cups turkey sausage
  • 3/4 cup low fat mozzarella 1/4 cup shredded Parmesan cheese combined
  • 4 large red peppers
  • 2 cups cooked brown rice (Optional)

Instructions

  • Preheat oven to 375 degrees.
  • Sauté onion, garlic, mushrooms and green pepper until caramelized.
  • Mix in turkey sausage and cook until warm. (If you are choosing to add the optional cooked rice, mix that in after your veggies are cooked in a separate bowl, then stuff peppers and top with cheese)
  • Cut the tops off the red peppers, take out middle and stand the peppers upright on end.
  • Add 1 cup of sausage mixture to each pepper and top with ¼ cup cheese mixture.
  • Place peppers on cookie sheet and bake for 35 mins.

Notes

If you want to make this batch bigger and add a starch to your meal, try adding 2 cups cooked brown rice and mixing it in with your Turkey Sausage, peppers, onions and mushrooms before you bake!

If you like spice, try adding 1 tsp cumin and 1 tsp. paprika or a pinch of red pepper flakes!

Fish Tacos

Ingredients

  • 1+1/2 pounds of Mild White Fish (haddock, cod, etc)
  • 8 Whole Wheat Soft Tortillas

For the Marinade:

  • 1 Lime
  • 1/4 tsp. ground cumin
  • 1/4 tsp chili powder
  • 2 T. Olive Oil
  • Salt and Pepper

For the Coleslaw:

  • 1 Bag Shredded Cabbage (approximately 4 cups)
  • ½ C Chopped Green Onion
  • 1-2 T. finely Chopped Jalapeno
  • 1 T. Chopped Fresh Cilantro
  • 3 T. White Wine Vinegar
  • 2 T. Fresh Lime Juice
  • 1 tsp Celery Salt
  • 2 T. Olive Oil
  • 3 T. Fat Free Greek Yogurt
  • ½ tsp Garlic Powder
  • 6 Packets no Calorie Sweetener

For the Cucumber And Corn Salsa:

  • 2 C Small Diced Cucumbers
  • 2 Finely Diced Roma Tomatoes
  • 1 C Corn
  • 1 T. Chopped Fresh Cilantro
  • ¼ C Diced Green Onion
  • 1 Packet no Calorie Sweetener
  • 1 T. Finely Diced Jalapeno
  • 2 T. Fresh Lime Juice
  • ½ tsp Ground Cumin
  • ½ tsp Garlic Powder
  • 2 tsp Olive Oil
  • Salt and Pepper to Taste

Instructions

  • To Marinade fish, mix all ingredients from Marinade list.
  • Pour marinade over and coat the fish well, set aside.
  • Preheat oven to 375 degrees.
  • In large bowl beat together white wine vinegar, lime juice, celery salt, olive oil, yogurt, garlic powder and sweetener from coleslaw recipe.
  • Add cabbage, green onion, jalapeno, and cilantro and mix well.
  • Set aside.
  • Place fish in oven and cook at 375 degrees for 10-12 minutes or until done.
  • While fish is baking, stir together all salsa ingredients.
  • When fish is done, pull fish apart with forks to roughly shred.
  • To prepare tacos, put coleslaw in wrap, followed by some fish and top with the salsa.

Turkey Chili

Ingredients

  • 2 lbs Ground Turkey
  • 1 Medium Diced Onion
  • 1 T. Minced Garlic
  • 1 (28 oz) Can Crushed Tomatoes
  • 2 (15 oz each) Cans Diced Tomatoes with Chilies
  • 2 Bay Leaves
  • 7 Packets of no Calorie Sweetener
  • 4 T. Tomato Paste
  • 1 Bottle of Light Beer
  • 1 (15 oz) Can Beef Broth
  • 2 T. of Ground Cumin
  • 2 T. of Chili Powder
  • 1 tsp. of Cocoa Powder
  • 1 tsp. of Dried Oregano
  • 2 (15 oz each) Cans Great Northern or Navy Beans
  • 4 oz Whole Wheat Spaghetti – broken into 2” pieces & cooked (feel free to sub your fav healthy pasta or brown rice)
  • Salt & Pepper to Taste

Instructions

  • Brown ground turkey and onions until turkey is fully cooked.
  • Add garlic and cook 1 minute more.
  • Add beer, crushed tomatoes, diced tomatoes with chilies, tomato paste, beef broth, bay leaves, cumin, chili powder, cocoa and oregano and mix well.
  • Stir in beans, cooked spaghetti and sweetener.
  • Simmer for 30 minutes.
  • Remove bay leaves.

Notes

The secret to great chili is to build a multi-level of flavor. The beer and cocoa powder adds a wonderful complex flavor combined with the rest of the ingredients. This chili is tasty, healthy, low calorie and filling!! It also goes wonderfully with the sweet corn bread. (See Corn Bread recipe HERE)
