Apple Fro-Yo

Ingredients

  • 2 cups 0% FAGE Greek yogurt
  • 4 apples, peeled and shredded
  • 2 T. brown sugar
  • 1/2 cup oatmeal
  • 1 tsp. cinnamon
  • 3-4 packets of Truvia or stevia, or 4 Tbsp. honey
  • 1 tsp. vanilla
  • Pinch of salt

Instructions

  • Peel and shred apples, and place in a frying pan on medium heat. Cook until apples have created their own sauce and are quite soft (about 4 to 5 minutes.)
  • Add 2 T. brown sugar and 1/2 cup oats to the pan and cook 3 to 4 more minutes until the oats are lightly toasted. Do not burn the brown sugar or let the apples get too dry. Take off heat and set aside.
  • Take yogurt and add cinnamon, vanilla, a tiny pinch of salt and Truvia (can use stevia or 4 Tbsp. of honey). Mix well.
  • Once apple mixture has cooled, add it to the yogurt and stir well.
  • Place in a large plastic container (with lid) and freeze. Will be ready to serve in 90 minutes. If you let it freeze for much longer, you will need to let it stand and warm up at room temperature for 5 to 10 minutes before scooping.

Notes & Tips

For best results, drizzle honey over the top of yogurt. For a more personal experience, freeze in 4 individual dishes. Feel free to add a sprinkle of oatmeal over the top as well!

Apple Pie Parfait To Go

Apple Parfait

Ingredients

  • 1/2 cup uncooked quinoa
  • 2 tsp. Cinnamon
  • 3 tsp. vanilla
  • 4 apples
  • Stevia or Truvia
  • 1/2 cup oats
  • 1/2 cup walnuts
  • 1/4 cup brown sugar
  • 2 T. of water
  • 2 cups 0% FAGE greek yogurt or yogurt of choice

Instructions

  • Follow cooking instructions for the quinoa and add 2 tsp. vanilla to the water. Let cool and set aside.
  • Peel and chop apples. Cook in a lightly sprayed frying pan on medium, stirring often until apples have their own sauce, and are slightly softened and sweet (about 10 minutes with a lid on.)
  • In another small frying pan, heated at a low to medium heat, add uncooked oats, chopped walnuts and brown sugar. Lightly toast, stirring very often. (This takes about 3 to 5 minutes.) Be sure not to burn the brown sugar. This should be crumbly with a very slight crunchiness.
  • Combine your quinoa and apples in a separate bowl and let cool. Once cool, add 2 packets of stevia or Truvia, and stir. If you prefer, you can add 2 Tbsp. honey as well.
  • Place Greek Yogurt or yogurt of choice in a bowl. Mix in cinnamon and remaining 1 tsp.vanilla. I like to use FAGE 0% and sweeten it myself. If you want it a bit sweeter, add 2 to 3 packets of stevia or Truvia. You also can use 2 Tbsp. of honey here as well or leave plain if you donʼt like it sweet.
  • Prepare your 4 cups for the parfaits. If you want to be able to grab these and go, use a plastic cup with a cover or use plastic wrap for the top. You could also use a small travel container. I like to put a couple in a pretty martini, wine or juice glass for a dessert after dinner or at-home breakfast. Choose medium- to small-sized glasses to make 4 to 5 parfaits.
  • Spoon about a half-inch of the quinoa and apple mixture into your container, followed by a layer of yogurt, one more layer of quinoa and apple, then yogurt on the top. Your last layer is your oat and walnut crumble. Sprinkle a generous amount on top.
  • Refrigerate about 30 minutes and serve.

Tips

Double the batch so you have a bunch to keep on hand for the week. Also, feel free to leave out any stevia, Truvia or honey outside of the brown sugar if you don’t like your treats as sweet.

Ginger Bread Cookies

Ginger Bread Cookies

Ingredients

  • 1/3 c. butter softened
  • 3/4 c. packed brown sugar (you can use 1/4 c. brown sugar and 1/4 c. Baking Truvia to cut down on sugar, but they will not be as soft and chewy)
  • 1/2 c. molasses (can use 1/4 c. to cut down on sugar but they will not be as soft or chewy)
  • 1 egg
  • 3 cups all-purpose flour (can use 2 c. whole wheat and 1 c. all-purpose instead but the cookie dough will have a different texture)
  • 3 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350 degrees.
  • In a mixing bowl, mix softened butter and brown sugar until smooth.
  • Beat in eggs, molasses, vanilla, spices, baking soda and powder until smooth.
  • Slowly mix in flour.
  • Place dough in the fridge until it easy to work with – about 15-30 minutes.
  • On a lightly floured surface roll out dough to about 1/8 inch thickness and use small cookie cutters of choice.
  • If you don’t have a cookie cutter you can form these into small circular cookies.
  • Bake for about 5-6 minutes and remove from oven to let cool.
  • Leave plain or use a light frosting and candies of your choice to decorate.

Notes

For a fun delicious spin on these yummy cookies, add 3 T. grated zest or orange. Such an amazing way to spice up your ginger men!
