Onion Ring Patties

Ingredients

  • 3 C Diced Sweet Onions
  • 1⁄2 C Plus 2 T. Whole Wheat Flour
  • 1⁄4 C Whole Grain Corn Meal
  • 1 tsp Baking Powder
  • 3⁄4 tsp Garlic Salt
  • Pinch of Cayenne Pepper
  • 3 Egg Whites
  • 1⁄2 C Skim Milk

Instructions

  • Mix dry ingredients together.
  • Whip egg whites and milk together and add to dry ingredients.
  • Add onions and mix thoroughly.
  • Make seven patties and put on generously sprayed baking sheet.
  • Spray top of onion patties with cooking spray.
  • Salt top of patties.
  • Bake in 425 degree oven for 20-25 minutes until patties are crispy.
  • Flip patties half way through baking time.

Crab Stuffed Haddock

Stuffed Sole

Ingredients

  • (4) 4 oz Haddock Fillets (about 1” thick)
  • (1) 6 oz Can White Crab (drained)
  • 4 Laughing Cow Light Garlic & Herb Cheese Wedges
  • 1⁄2 C Whole Wheat Bread Crumbs
  • Pinch of Red Pepper Flakes
  • Paprika, Salt & Pepper to Taste

Instructions

  • Cut haddock fillets in half lengthwise to almost through.
  • Open fillets up and salt and pepper inside of the fillets.
  • Mix together the crab, cheese, bread crumbs and red pepper flakes.
  • Spread 1⁄4 of crab mixture in each haddock fillet.
  • Fold top of haddock over crab mixture.
  • Spray fillets with cooking spray.
  • Sprinkle paprika on top of fillets.
  • Put fish on baking sheet sprayed with cooking spray.
  • Salt and pepper.
  • Bake in 375 degree oven for 15 minutes or until fish is done.

Notes

Serve over brown rice or quinoa dressed in a little olive oil and balsamic vinegar.

Baked Mac & Cheese

Ingredients

  • 2 cups whole wheat elbow noodles
  • 1⁄4 cup whole wheat flour
  • 1-2 T. sea salt (and pepper if desired) to taste
  • 1 cup skim milk
  • 4oz low fat shredded Swiss cheese
  • 4oz low fat shredded cheddar cheese
  • *Optional* 1/8 c. whole wheat bread crumbs and 2 T. Parmesan cheese may be sprinkled on top before baking to add a crispy baked layer over the top.

Instructions

  • Preheat Oven to 375 degrees.
  • Boil noodles on stove-top according to package directions.
  • Drain noodles and transfer to casserole dish.
  • Slowly add whole wheat flour and milk while stirring.
  • Add salt and cheese and mix well.
  • Sprinkle top with bread crumbs.
  • Bake in oven until top is lightly brown.
