Ingredients

  • 2 Medium Onions (thinly sliced)
  • 8 oz Sliced Mushrooms (fresh or canned)
  • 2 tsp EVOO (divided)
  • 2 (16 oz each) Bags Whole Green Beans (thawed & dry)
  • 1 Can Water Chestnuts (slivered)
  • 2 tsp Minced Garlic
  • 2 T. Flour
  • ½ C White Wine
  • ½ C Lowfat Buttermilk
  • ½ C Slivered Toasted Almonds
  • 2 T. Parmesan Cheese
  • Salt & Pepper to Taste

Instructions

  • Preheat oven to 350 degrees.
  • In large fry pan add 1 tsp EVOO, onions & mushrooms.
  • Cook on medium High heat until onions are almost caramelized.
  • Add green beans, water chestnuts, garlic, and salt and pepper to taste.
  • Stir fry until beans are tender crisp. Add 1 tsp EVOO, flour and cook for 1 minute.
  • Stir in wine and mix well.
  • Stir in buttermilk and almonds.
  • Transfer to a baking dish and sprinkle with 2 T. Parmesan cheese.
  • Before serving bake in 350 degree oven until heated through and cheese is golden brown. (about 15-20 min)

Sweet Potato Souffle

Sweet potatoe Souffle

Ingredients

  • 6 Large Sweet Potatoes
  • 1 & 1/2 C Lowfat Buttermilk
  • ¼ C Honey
  • 4 T. Light Butter
  • 5 Egg Whites
  • ½ tsp Cinnamon
  • 10 Packets no Calorie Sweetener
  • ¼ tsp Nutmeg
  • ½ tsp Chili Powder
  • ¼ tsp Crushed Red Pepper Flakes
  • ¼ C Chopped Pecan
  • ¼ C Sugar Free Maple Syrup (optional)

Instructions

  • Cook sweet potatoes in microwave until soft (appr 15 mins.)
  • Slice sweet potato in half lengthwise and scoop potato out of skins and into a cooking pot.
  • Heat on medium heat.
  • Add buttermilk, honey, butter, cinnamon, nutmeg, chili powder, red pepper flakes and maple syrup (optional).
  • Mash warm potato mixture or beat with hand mixer for creamier consistency.
  • Beat egg whites with mixer to stiff peak and gently fold into potato mixture.
  • Transfer to casserole dish, sprinkle with chopped pecans and bake in 350 degree oven for 20-25 mins. or until egg whites are set.

Notes

Don’t be concerned about the sugar because the majority of the sugar count comes from the sweet potato which is a natural healthy sugar from the vegetable which your body utilizes for energy.

Cranberry Apple Sauce

Ingredients

  • 1 (12 oz) Bag Frozen Cranberries
  • 6 lg Apples (peeled, quartered & thinly sliced)
  • ½ C Red Wine (or sugar free cranberry juice, or orange juice)
  • 1 C Water
  • 1 & 1/2 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 15 Packets (about ¼ C) Calorie Free Sweetener
  • ¼ C Toasted Chopped Walnuts
  • ¾ C Fat Free Cottage Cheese

Instructions

  • Put thawed cranberries in a large sauce pan on medium heat.
  • Add red wine (or juice) and ½ C water.
  • Add no calorie sweetener, ½ tsp cinnamon, and nutmeg.
  • Cook until cranberries are soft and mash with hand masher.
  • Add slice apples, ½ C water and rest of cinnamon.
  • Cook until apples are soft and mash to a sauce consistency.
  • Add cottage cheese and cook until cottage cheese melts.
  • Mash again to break up the larger cottage cheese pieces (adding the cottage cheese is optional, the sauce is great without it but with it you achieve a creamier and more mellow flavor.) Better yet, divide the sauce in half, then add half of the cottage cheese and you now have two cranberry sauces that are sure to please everyone around your table.
  • Add the toasted walnuts.
