Sweet Brie Pears

Pears

INGREDIENTS

  • 3 pears halved
  • Brie cheese of choice 5-6 oz
  • 2 graham crackers
  • Honey

INSTRUCTIONS

  • Preheat oven to 425 degrees.
  • Cut pears in half and take a spoon or melon baller and dig a small circle in the center of pear.
  • Spray a baking dish with oil and place pears face down to cook for 30 minutes.
  • Once pears have cooked for 30 minutes, flip them over in the dish, chop brie into small 1 oz bite size and place in the center of each pear.
  • Crumble the graham crackers on the tops of each pear and bake for 5-7 more minutes until cheese is melty and crackers have a become richer in color.
  • Remove from oven and drizzle about a tsp of honey on top of each pear.
  • Serve warm or cool.

Whipped Pumpkin Apple Sweet Potatoes

Ingredients

  • 4 small/med sweet potatoes
  • 2 tsp. cinnamon
  • 1 can of pumpkin
  • 1 (15oz) container fat free or low fat ricotta cheese
  • 1 tsp paprika – I like to do 1 and 1/2 but I like it spicy!
  • 1/4 c. Baking Truvia or stevia
  • 1/3 c. Honey
  • 2 large apples – shredded on a cheese shredder
  • 4 Graham crackers crumbled for topping

Instructions

  • Preheat oven to 425.
  • Boil sweet potatoes in large pot full of water with 1 tsp salt for 15 minutes or until you can easily pierce a knife through them.
  • Take potatoes out of water when done, let cool, peel and put in a large mixing bowl.
  • Turn mixer on and add all of the rest of the ingredients one at time EXCEPT for the graham crackers.
  • Mix very well until smooth consistency.
  • Pour mixture into a large baking dish, spread evenly and add crumbled graham crackers to the top and a sprinkle of cinnamon.
  • Bake for 20-25 minutes or until crackers are a bit browned.

Notes

If you like this spicy like I do, add a bit more paprika or sprinkle lightly on top when done. If you like it less sweet, cut back on the Truvia or stevia.

Stuffed Mushrooms

INGREDIENTS

  • 16 oz Fresh Portabella Mushrooms
  • 3/4 C Cooked Ground Turkey Sausage (Try My Turkey Sausage recipe!)
  • Stems (removed from the fresh mushrooms)
  • 2 TBLS Dried Bread Crumbs
  • 1 Packet no Calorie Sweetener (Truvia) (optional)
  • 1/2 C Finely Chopped Onion
  • 1/2 C Finely Chopped Celery
  • 1 C Lowfat Mozzarella Cheese
  • 2 T. Grated Parmesan cheese
  • 1 Egg White
  • Salt & Pepper to Taste

INSTRUCTIONS

  • Remove stems from mushroom caps and finely chop the stems.
  • Sauté onions, celery and chopped stems until tender.
  • Let everything cool.
  • Combine onion mixture, sausage, cheese, egg white and bread crumbs and mix well.
  • Stuff the mushrooms with mixture and bake for about 15-20 minutes or until golden at 375 degrees.

NOTES

My “Italian Turkey Sausage” is perfect for this recipe. Very low calorie and low fat. You can find the turkey sausage recipe under “Dinner Recipes”.
